I used a good sugar recipe that held it's shape pretty well. Hope this helps **Q: How is the best way to decorate these cookies? Cut fondant or flood with royal icing? If flood, do the stamped areas show up if the cookie is flooded** A: I haven't tried fondant, so piped royal icing would definitely work. Instead of flooding with royal icing, I would try dipping one side of the cookie in icing, then piping. You will see an indentation and some unfilled pockets where imprinted with lettering that could be used as a guide for the piping. If you have patience, you could clear the imprint with a tooth pick or purchase a fingernail polish dot design tool strictly to be used for cookies. In addition to keeping my rolled dough well chilled and well floured, I kept a plate of loose flour on hand; every few cookies I would place the cutter on the plate and bop the plunger a couple times. Keep a toothpick on hand in case dough starts to stick in the letters. If you're using the loose letters, they may wander a bit and need to be slid back into place from time to time.I added neon gel food coloring to my heart-shaped cream cheese butter cookies, and with the text they looked just like Valentine conversation heart candies.
