Can I change the handle on it

To a replacement of their tap handle, yes. I’m pretty disappointed the threading is too small for standard tap handles.

Can cold coffee be used with this?

I don't think so unless the coffee is already carbonated. This machine doesn't used CO2 or N2 chargers. It changes the bubble size of the existing carbonation so if your beverage is not already carbonated, nothing would happen.

Will a 40 oz beer bottle fit in the Draftpour?

I’m not sure but I don’t believe so.
