If this the ham leg or not?** A: Its the shoulder which is not as good as the leg. Its okay but not as good as a leg. Do I need to refrigerate it?** A: Hello,So basically if you don't take the ham out of the air tight plastic wrap your are fine. You can leave it unopened out of a refrigerator as long as you like. If you remove it from that plastic keep a cheese cloth on it or a kitchen towel over it. When you start to cut slices off of it make sure to keep that point moist with Olive Oil. Take like a sauce type brush and lightly put Olive Oil on it when it looks super dry.
