She has smaller hands, making it difficult to get comfortable with most professional knives. The knife is perfectly balanced - can balance on one outstretched finger, in fact- and the smaller grip is the perfect size for her hand. Stainless blade is ideal for busy home cook, maintaining a stainless blade takes less effort than other steels. Has a good edge right out of the box - and we are anticipating very easy touch ups just to maintain the edge, which can easily slice very ripe tomatoes into transparent slices.
