I've resorted to using a little bit of spray-on dish soap with some baking soda and 50% vinegar/water on them a few times after an especially messy stir fry session. I even cooked one for quite some time with no water, something has ruined pans in the past. This one took it like a champ. They're a bit lightweight, but the heat distribution is pretty good. However, ultimately, they declined to replace just the one piece. Sure, I could have returned the whole set no questions asked but have decided not to do that. Start the heat on high for a minute then turn it down. Put your hand over the pan if you feel heat then put your eggs in. It will not disappoint. I like my eggs cooked in a little butter so it's fine by me. I love my set so far its been great to cook with and the clean up is so easy. I want one more frying pan and waiting for the price to reduce a bit. Bottom line if you take care of these pans they will last a long time. Don't use anything but rubber or silicone utensils in the pans to keep from scratching. I cooked hamburger in the large pan and then made burrito mixture and simmered it . Totally perfect. **Q: 6 piece set says fry pans are 8" and10". i didn't think that blue diamond made an 8 inch fry pan. that's what i want. is it really an 8 inch?** A: I just used a measuring tape, and my smallest Blue Diamond fry pan measures 7-1/2 inches. **Q: Can these pans be used with olive oil? As long as you're not on really high heat, should be okay, but one review said instructions with pan say no.** A: I only use Olive oil to cook with. I've been careful not to over heat me pan . The highest heat I'm using is a little past medium. These pans are wonderful to cook in, they heat more evenly all the way to the edges. I did used an olive oil cooking spray in the can twice and it seemed to him it up a bit. It did clean off, but I won't use the can spray again. I'm hand washing as much as I can , but they going through the dish washer some with no problems with sticking and the finish seems to be intact.
