How many ounces does each section hold?

Not sure. They are pretty big. We are counting macros so I know they easily fit 6oz of chicken in the big side & 5 oz sweet potatoes in the little side. :)

How do the compartments break down on the 2-compartment model? (3 compartment lists 2/1.25/1.25 but didn't see it on the 2's)

It's hard for me to say, as I am storing only sold food. Right now, I easily store 6 ounces in the large side and 3.5 ounces in the smaller side. One thing: the divider does not go up to the lid, so if you are storing liquid, you would have to be careful.

Are the lids easy to take off/on? I have elderly parents and the strength in their hands is not that great.

Yes fairly easy. I've had other brands that I couldn't close without using all my might. I think they would be great for them.
