I usually weigh and measure on the counter and fill the the dispenser prior to placing it in the attachment. I don’t have the ingredients all over the counter from adding them too quickly. Batters are noticeably smoother and more consistent. **Q: I am concerned with over mixing delicate cakes while this sifts. Can you stop the paddle mixer, sift it all into the bowl, then resume mixing?** A: As with all Kitchen attachments the paddle would still mix ingredients if attached. This item does use the lowest setting 1 so I don’t think it would be a problem. I’m not familiar with your recipe so perhaps it may be best to unattach the paddle, sift, and reattach paddle.
