You’re supposed to press down on the dough disk and work it up the sides but, since I typically don’t wait for the dough to chill and set long enough, I find it easier to turn the bottom side up, wrap a piece of plastic wrap over it, put the dough on top and work it downward over the dolly. Then I can easily take the dough cup off and fill it.
