## Description

Fermentation – the oldest method of food preservation known to humankind The method of fermentation, specifically speaking lacto-fermentation is making a comeback – again. Be part of this movement toward homemade healthy beneficial foods using low maintenance methods. The process of lacto-fermentation in its simplest terms uses the natural bacteria present in vegetables, encourages growth of the good stuff, and the anaerobic acidic environment created in your jar prevent growth of the bad stuff*. Gases are produced during the process, and without the air release valve built into the lid of this jar, pressure can build up creating the need to open the jar – potentially affecting the fermentation process and contaminating your batch. With no need to ‘burp’ this jar, once you’ve prepped your ingredients you are free to watch the process waiting for the moment that your batch is ready for consumption, storage, and even gifting – as you might a jam or chutney but with a lot less sugar! Another huge benefit for environmentally conscious people interested in preserving food – unlike canning, or even freezing which require electricity and gas and consume energy, fermentation requires only your food and equipment. Nothing more, aside from a little patience. Recipes included in the jar (in English) can be easily concocted and adapted, especially for vegan, vegetarian, pescatarian (as with traditional Kimchi recipes calling for fish sauce, squid and other seafood). Provided that the key ingredients are added, for example with sauerkraut, a rough and quite safe guide is that 25% of your jar can be your ideal flavour mixture (spices, vegetables, herbs), with 75% cabbage, and the result will be wonderfully suited to your tastes as well as your digestive system. A variant to be aware of is temperature. The process of fermentation can be halted, slowed and sped up depending on ambient temperature – this will be explained with the instructions in your jar.

Review: Seems to work beautifully... - ...for sourdough starter! Extremely new to this, and it wasn't working out well with Kilner jars. The size (smallest; perhaps a litre?) and the automatic gas-relief/release valve are a dream. I think they're just the ticket in reviving my 40 year-old starter that I was about to bin, due to the unfortunate act of murder (sourcide? startercide?) on my part. Yeesh. Within a week, the poor thing was unrecognisable, both in look and smell. Good gawd, the smell...eye-watering. I think it's coming back now, phew! *crosses fingers and toes* 😆 EDIT: Yup, it totally worked to bring the starter back to life. It's thriving. Great jar.
Review: My first batch came out amazing! - Perfect jar. It made the process of pickling vegetables extremely easy, and my first batch came out perfectly! I washed the vegetables in tap water, but used a 3% brine made with bottled water. Jar is easy to clean and very sturdy. Comes with a handy wheel on the lid you can use to mark the date you started fermentation. I'm definitely buying another!

### ⭐⭐⭐⭐ Easy Peasy way to get started with fermenting
*by S***A on 19 May 2021*

I was wanting to start fermenting to get some pickles to get some good bacteria into my gut for health reasons. When I was researching it, it all seemed very complicated - with gases being produced and images of possible explosions arising in my mind!!! In the end I bought this jar, stuck some vegetables in it (carrots, courgettes, peppers, garlic cabbage, etc) and herbs (peppercorns, chilli etc), added some salt water, and left it for a week. It was a complete success...... Having said that, if I were buying one again, I would: 1. Buy some glass weights. These keep the vegetables below the water and stop mould forming. I improvised with a glass jar and a cabbage leaf, but weights would have been better. 2. Buy a jar where the opening at the top reaches all the way to the sides of the jar. This is because on this jar, if you place a weight through the opening - because the jar is wider beneath the opening, veg can sneak round the glass weight at the side. Ideally you don't want this to happen. So a great product but better options are out there - and I have seen a few on Amazon.
