Fresh! *by A***D on 6 October 2024* Buckwheat is awesome to cook with for those of us who don't tolerate wheat well and this one is really fresh. If you are new to using Buckwheat, learn to cook with it, such as letting pancake batter sit for about 20 minutes before cooking it, to make fluffy, yummy pancakes. Real maple syrup is best with Buckwheat, IMHO. Honey is also a good second. This nutty tasting grain tastes seo much better and richer than GMO wheat. It's sad that they altered our wheat to the point that it makes people sick, and that GMO-altered wheat has infected most of the wheat on the planet, and causes much intestinal distress, has so many people off to the gastrointerologist. Thankfully, Buckwheat has not been messed with! The pancakes we make taste far better than any made with wheat, and these are more filling, and although they keep you full longer. They don't give you that "rock in your stomach" feeling, and it is far less prone to cause digestive problems. There are a lot of "gluten-free" products and flours, but this flour, IMHO, has the best flavor of any I have tried, and I have tried a lot! Buckwheat is amazing, yet you need to learn to cook with it! Mostly it's about giving time to rise before cooking it. This brand, Red Mill, is excellent. It was fresh when received, too! Freshness does make a difference, and Red Mill comes through! Learn how to cook with buckwheat, and it will be a treat to make pancakes with the kids, and without the tummy aches afterwards. It takes about 20 minutes longer to cook, but it is worth every minute! Using buttermilk (or milk with vinegar as a substitute) instead of just milk is key when making buckwheat pancakes!
