We came up with the mat with perfect thickness and pattern. The spaces between the big circles are just perfect. Not too close so that the macaron shells ended up sticking together when baked. Not too far that yields only a few shells per sheet. Perfect use of space on a sheet. That is why we make 2 different patterns. One for mini-sized macarons that yields 53 shells per sheet. One for regular-sized that yields 28 shells per sheet. Used in place of parchment to help prevent sticking or burning.
