If I dim using the remote then turn off at the wall switch, will the light still remember the dim setting the next time I turn it on?

No, it doesn't remember the last setting prior to turning off if using the wall switch, i.e. once you turn the light back on it'll be on a standard setting, which is 100% brightness and one of the colder light modes. If you turn off the light using the remote, it will remember the last setting prior to power-off.
