Easy to use and easy to handle unlike heavy crock jars. Perfect for any kind of pickling from Kimchi to Sauerkraut. E-Jen storage container comes with an adjustable pressing plate that acts as an inner vacuum. Fermentation allows food to retain more vitamins and minerals than other types of preserving. The pressing plate keeps the kimchi/pickles in an airtight space promoting an anaerobic state benefiting the growth of probiotics (lactobacillus). The design and shape of the containers make it easy to store goods in both the refrigerator and in the pantry without taking too much space.

Review: I love this range of products for kimchi - I have use ceramic pots for kimchi and find this range better for me because it’s easy to release the gas, store in the fridge and contains the odour better - not Purfik, but much better. The 5.2L is very large for one Chinese cabbage, but I find it best because the seal works very well - it does take quite a lot of space in the fridge, so I have tried the 1.7l and 3.4l which contain a Chinese leaf, but the fermentation does break the seals and liquid rises above the seal - not a problem if you’re religiously checking every day and cleaning away. So, my personal choice for Chinese cabbage is 5.2L if you don’t mind the space it takes in the fridge - I often put mine in the cellar when needed, and it’s okay left for several days without attention. The 3.4l is a much more appropriate size for a single cabbage, but does need daily attention because liquids will rise above the seal and must be removed. The 1.7l is a wonderfully convenient size for the fridge, and perfect for chopped vegetables, not perfect for a halved cabbage.

**Q: I need a copy of the manual in English?**
A: John, I do not think there is any "owners" manual. The device is very easy to use. Simply prep the cabbage by slicing thin and thoroughly mixing with 2 or 3 tablespoons of salt per five pound of cabbage in a large bowl. Then "massage or knead" the cabbage for about ten minutes until it begins to yield water. Put into e-Jen and prep another five pounds. Do this until you have as much as you want (I usually do 15 pounds). Press the inner insert down as far as you can, leaving the "blow hole" open. When you can't press any further, close the blow hole, put top on and leave in a cool place I put mine on the concrete floor of the garage) for at least four weeks. You can test every once in a while to see if it has fermented to your taste. If not, close again and wait another week.

**Q: How does this prevent mold from building up?  How is the plug used?**
A: to prevent mold build up you fill the container up with kimchi until it is roughly an inch from the top then place the plastic insert with the plug open into the container and press down until Kimchi juice is about to come through the plug. At that point you plug it up and place it in the fridge. This creates a good airtight seal. It is also helpful to place an extra layer of clear plastic wrap before the lid to help eliminate odor escaping.That

**Q: Has anyone made sauerkraut with this?  Any problems?**
A: Did not have problems. Got perfect sauerkraut. Liked the container - easy to clean, easy to close, no smell in the fridge etc.

**Q: Can you use these for pickles ?**
A: Yes, you can make fermented pickles and you can make a myriad of other fermented vegetables as well. My latest project was fermented onions and before that, I made kimchi.

### ⭐⭐⭐⭐⭐ Easy to use, produces a great product

Have had this for a while but just got round to using it. I made some sauerkraut and decided to ferment it in the e-jen. I didn't need to stuff a jar and tamp it down, there was no need to cover the cabbage with a large cabbage leaf or bags of water to keep the cabbage under the liquid. The inner lid creates an air tight seal and the outer lid keeps the smells in. The cabbage fermented quite quickly and after only a few days I put the whole box in the fridge. It is quite expensive but overall I would say it is worth it.
