**Q: I won't be able to use these in one go.  I know you can brine them but has anyone experience of freezing them?**
A: I have not frozen them, but kept them in the fridge for 2 weeks, they do go black but that is the ripening process rather than them going off. They were perfectly good to use. It may be worth freezing a few to see how it works.
