The author felt you wouldn't want harsh chemicals around your starter as it could kill the yeast you need to get it fermenting. But you need to keep the area clean so the starter doesn't get contaminated with molds. I can't speak to chemical compositions or environmental safety but I trust the author. I can say it cleans the counters and my stovetop really well. I always get a fine layer of flour all over the place and wash the surfaces at least once a day. There is no bad smell that burns my nose like the bleach cleaner sprays and the surface is sparkling afterwards. It only gets streaky if I didn't get all the flour off. I dry the surfaces with a towel because I want to be able to see if they are shiny clean so I don't know if it would dry streaky, but I don't think it does. It is very easy to dry.
