The author felt you wouldn't want harsh chemicals around your starter as it could kill the yeast you need to get it fermenting. I can say it cleans the counters and my stovetop really well. I always get a fine layer of flour all over the place and wash the surfaces at least once a day. There is no bad smell that burns my nose like the bleach cleaner sprays and the surface is sparkling afterwards. It only gets streaky if I didn't get all the flour off. I dry the surfaces with a towel because I want to be able to see if they are shiny clean so I don't know if it would dry streaky, but I don't think it does. It is very easy to dry.
