In this beautiful, smaller format edition of the award-winning Big Fat Duck Cookbook, we hear the full story of the meteoric rise of Heston Blumenthal and The Fat Duck, birthplace of snail porridge and bacon-and-egg ice cream, and encounter the passion, perfection and weird science behind the man and the restaurant. Heston Blumenthal is widely acknowledged to be a genius, and The Fat Duck has twice been voted the Best Restaurant in the World by a peer group of top chefs. But he is entirely self-taught, and the story of his restaurant has broken every rule in the book. His success has been borne out of his pure obsession, endless invention and a childish curiosity into how things work - whether it's how smell affects taste, what different flavours mean to us on a biological level, or how temperature is distributed in the centre of a souffle. In the first section of The Fat Duck Cookbook, we learn the history of the restaurant, from its humble beginnings to its third Michelin star (the day Heston received the news of this he had been wondering how exactly he would be able to pay his staff that month). Next we meet 50 of his signature recipes - sardine on toast sorbet, salmon poached with liquorice, hot and iced tea, chocolate wine - which, while challenging for anyone not equipped with ice baths, dehydrators, vacuum pumps and nitrogen on tap, will inspire home cooks and chefs alike. Finally, we hear from the experts whose scientific know-how has contributed to Heston's topsy-turvy world. With an introduction by Harold McGee, incredible colour photographs throughout and illustrations by Dave McKean, The Fat Duck Cookbook is not only the nearest thing to an autobiography from the world's most fascinating chef, but also a stunning, colourful and joyous work of art. Review: Better than expected - Item was as good as new. Exceptional. Review: Fascinating insight into culinary perfection - I knew when I bought this book that I would not be using it as a source of recipes, and any prospective purchasers should be aware of that at the outset. However the book is a deeply fascinating document of how Heston has created stunning recipes that us mere mortals can only dream of tasting. The history section is really interesting and shows just how dedicated Mr Blumenthal has been in his pursuit of the extraordinary. The recipes are beautifully explained and photographed and there is a real education to be had here. I've tried making his triple cooked chips and have certainly taken some of the information and used it. This is a marvellous book and its a worthy addition to my bookshelf.. Hope you enjoy too.

For foodies and engineers!
The recipies in here are interesting to say the least. The first issue would be getting the ingredients - I'm not sure my local Waitrose stocks Leather Essence! Having found a recipie I could get the ingredients for I was all ready to go until the step in the instructions to place the mixture in a centrifuge at 4,000 rpm. Luckily we are redesigning our kitchen so either we need to incorporate one, or I need to do some creative engineering with my power drill and a flask.... Overall a brilliant read and a source of inspiration either in food or engineering!

Not for everyday cooking
Not a book for everyday cooking, but very inspiring. The only down is you need a lot of special ingredients and special equipment to cook the recipes at home.

Work of art
This book is just amazing. I am a huge Gordon ramsay fan, but after reading this book Ramsay went down to nr2. the first part is mainly Heston writing of how he got to his success, its very well written, and interesting. the recipes and pictures are amazing, I doubt I will try to make his dishes, but if you like food, I recommend this book!! don't buy this book if you want simple dishes you can make in 15 minutes though, you will not like it.

Great book for memorable reading
If you like food and creativity this book is for you. It explains how the British 3 stars Michelin was born and how the food and creativity of Heston Blumenthal made it possible. An amazing adventure that brings you to "Question Everything"

Amazing and beautiful book full of recipes you never make.
Amazing and beautiful book full of recipes you never make. But who cares when you try some of the elements of the dishes, and they are shown great in this book. I like it like Grant Achatz - Alinea. True inspiration for the foodie. Dont buy it if you wanna make food i 30 min. But If you wanna a know what a Master Chef like Heston Blumenthal is thinking when he creates dishes, menues etc. Then this is a must. a dream builder for visiting The fat duck, even if you have do overtime for a year.

Madness
I have tried a number of recipes in this book some are actually achievable for normal human beings. Other than that it is a science book and you should and will enjoy the journey. A super coffee table book, recipes are written and explained in very good detail and the pictures are very appetising. This is a cook book that demands every once in a while you don your Heston glasses and inner madness to see what happens. Even if it doesn't work 100% you'll probably still find you have a damn tasty dish.
