Is this paint water proof?

Acrylic paint won't wash off, once it's dry. That's what makes it so good to paint with: wet acrylic can be washed off, dry acrylic won't. Whether it's porous - i.e. whether it would protect paper or fabric from moisture - depends on how thickly it's painted on. If you're looking for a specific use, it's worth asking Winsor & Newton: they are very helpful about such things.

Is this thick enough to cover prints on the canvas borders?

This paint has a thick creamy texture to it and will cover most acrylic colours, but it might take more than one coat.

Is this suitable to paint the repaint the lettering on a headstone? Thank you.

Sorry Avril, the painter in my family is my sister in law, who lives in Bali. I buy paint to take out to her. I have no idea what other uses there are for this paint.

how quickly does this dry? Does the colour darken slightly once dry?

It does not darken or shift colour - remains white even after leaving in the sun. Drying time depends on hoow thickly you apply it. If like me you like thick layers it can take up to an hour; if you only paint thinly, the paint will dry in 10=15 minutes.
