Depending on how sharp your knives are to begin with you start off with the appropriate stone. If the knife your sharpening is very dull then obviously start off with the coarser grit and then work through to the finer 8000 grit which I found will put a nice polish on the blade as well. The stones aren't cheap but they come from Japan and they are well worth the money.The way I see it, the Japanese have a vast quantity of knowledge and history when it comes to swords or blade forging so when I saw these Japanese sharpening stones I had to have them! ### ⭐⭐⭐⭐⭐ just if you want more from your knives *by A***D on Reviewed in the United Kingdom on 29 September 2012* I bought this set of 2 stones because i received a very nice japanese knife as gift.
