Mainly two sizes, 14" and 16", depending on what I am cooking and the size of the meal determines the size I use. However, I prefer a deep 14" round base carbon steel wok as I find that the most versatile and user friendly. But if using a carbon steel wok, make sure it is well seasoned to be non stick. If new, wash well first to remove the waxed coating, then heat on a strong hot flame until the entire wok is blue. Then heat again until it hot or starts to steam a little, pour a small amount of cooking oil into the wok and while still hot...roll up some kitchen roll into a ball and using some tongues soak up the oil and wipe evenly around the wok. Heat till it steams and repeat, job done! You now have professionally treated wok that is none stick and a pleasure to use. After cooking, immediately wash wok out with warm water, dry with kitchen roll, and wipe round with a little coating of cooking oil using kitchen roll and put it away till next time. NEVER USE DETERGENT! Do the same with a flat bottom wok, back to your question, I would say 14" would fine! I hope this helps... **Q: is the handle removable?
