how many sets to build the big castle in the photo?

I'm not really sure, but I purchased the 62 piece and a 125 piece and my nephew is still building!

What is the length of the side of the square pieces?

The length of one side is 9 centimeters, just a tiny tad under 3 inches.

Is this brand compatible with Magna Tiles?

Yes - the magnets are slightly less strong though.
