Best kitchen knife I've ever used. I'm not sure what they mean by "German high carbon steel". X50CrMoV15? If they aren't being specific about the type of steel that suggests to me that they might use different steel from different batches which could mean an inconsistent product. I've been using it lightly for a year and haven't had to sharpen it yet but it's getting there. Will post and update on how easily it sharpens.

Super sharp out of the box. Great packaging. According to the negative reviews these are known to come chipped or don’t hold an edge. That wasn’t the case for the one I received. It’s possible Dalstrong had a quality control issue at some point but mine is beautiful. However, there are brands that give you sharp and sturdy knives for less money. Though not usually as pretty

Bought for my wife and she loves the chef knife and paring knife, she replaced he Hinkle knives with these. Great knife... especially for the price! You won't regret this purchase.

I couldn’t afford a bunch of knives and I didn’t want to have just a cheap one from Walmart. Some I called the best knife man I know and he said all around these are great!! I use one knife for most things in my kitchen and this is it!

I have Myabi, Dalstrong and Global knives. I have paid $100 to $250 for each knife. I have been using this knife for about a month now, and it is definitely my favourite. I am going to order another one after this review. This knife came really sharp out of the box (it easily cuts through papery outer skins of onions - that is one of my expectations and criteria). I really like the depth of the blade and the handle fits my hand better than any of my other knives. I would rather reach for this knife than any other, hence my ordering of a second one. Not sure what I might say as a home cook to let you know this is an honest review, but maybe just saying that is enough. March 19/25 Got my second one today, just as sharp as the first one. Love this knife.
