However all I found were overpriced racks that were too small for this size pan. There are however, molded indentations in the bottom of this pan which did serve some purpose as far as allowing the juices to spread across the bottom.. and the fact that I never had a rack for the last few decades I used a pan like this, reminded me that simply for the use of our Thanksgiving turkeys each November, it wasn’t really all that necessary. Besides that fact, it would be just another thing to clean off. Heck when I lift the 20+ lb turkey out of it to slice, maybe it would even get stuck into the meat on the bottom and when Transferred to a platter, there it would be again, creating an imbalance to deal with! So after that consideration, I just resolved to use it without one! I love it so much because I’ve been trying the open baking method and with fresh milled flour is hard to get a good tall loaf but with this it came out so perfect. The loaf on the pictures is a 50% fresh milled flour (200gr hard red wheat and 50g einkorn) with the other 50% organic AP from Costco. Best loaf ever.
