I use a good quality bottled water, heated up to almost boiling point on the hob (not the kettle due to limescale and impurities.) You do end up with one ice cube larger than the others, but the others end up beautifully square and crystal clear. The only pain is thawing the tray underneath so you can separate it from the black tray and release the ice cubes. I usually stab the cuboid of ice underneath - just under the black tray to release it, being careful not to pierce the black tray. Then, once separated from the cuboid of ice, the cubes should pop out fairly easily. I then transfer the cubes to a freezer bag and put them in the freezer. The cubes melt much more slowly than regular ones due to their size, so your drink doesn't get diluted, and your tonic stays fizzy! Sure, you can build this setup at home but who has the time. A few tips - do not force the cubes out, let everything out for a few minutes to loosen up. - some cubes will double in size, its normal, you just get a massive cube with each batch - the insulating material must not be manhandled, its not indestructible - dont store cubes for a ling time, they look best when fresh.
