Will an iPhone X in an Otterbox case fit in this stand?

I think so. I have iPhone 12 Pro Max with Otterbox Symmetry case but also has Mobi phone holder at the bottom (which makes it thicker at the bottom end) and it fits great. But you don't have to use the upper holders (that folds out like in the picture) and there's a bottom part that holds a wider variety of side. It's pretty versatile.

Can I use this with a pop socket on my phone?

The stand has a mostly solid back in the area where a pop socket would be, but it will work it just will change the angle of the phone slightly which can be adjusted with the stand. I don't use one so I really don't know what other effect it might have - would it tip to one side or the other while texting? I guess it would depend on the size of the phone and the pop socket.

How's the durability? Does the stand stay tight without anything holding it up from the back?

I am very happy with this stand. It is steady, slim yet solid. No, you don't have to hold it from the back.

Will the Samsung Fold fit?

Yes. Will also hold an iPad mini both portrait or in landscape mode.
