Comfortable, well balanced, flexible, and slices without drag
I use my chef's knife for just about everything, but it's not the best tool for carving turkeys or large roasts so this Christmas I finally got myself a carving knife, and what a difference having the right tool for the job makes! Thinner and a lot longer than my chef's knife, this carving knife has a long narrow blade that tapers to a fine edge that's perfect for slicing large hams, roasts, and that huge Thanksgiving turkey. The long straight blade allows me to use horizontal strokes rather than downward pressure when carving so I can get straight even slices from the largest of roasts, and the divots along the edge keep the food from sticking so there's no drag. The handle is comfortable to hold and the knife feels well balanced. The blade is moderately flexible which lets me follow the curvature of a carcass to get around the bones. It has an extremely sharp edge, a well-balanced, comfortable handle, and plenty of flexibility. Thick or thin slices, hot or cold meat it didn't matter. This carving knife produces long straight cuts without having to saw into foods making for a beautiful presentation. It's razor sharp right out of the box of course, and it will probably stay that way for a long time unless you do a LOT of roasts and use it frequently in which case it will need to be sharpened. I notice that the divots don't go all the way to the edge though, so it will be easy to sharpen whenever it finally needs to be. If you like roasts or ham, get this knife because it makes like so much easier than trying to slice with anything else. It even comes with a sheath for storage between use which is nice. Personally, I always hand wash knives like this and dry them with a towel before putting them away. Never ever in the dishwasher! Anyhow, the bottom line is this is a terrific knife for the job and very reasonably priced for the quality too.

Very handsome, very sharp, well made
Usually when someone is looking for a slicer like this, the defacto go-to is the victorinox fibrox pro slicer. I spent a lot of time reading reviews before deciding to go with this one instead for one simple reason: This knife is for my home, where I like to have things that look nice and work nice and I felt the fibrox was a bit industrial for my tastes. So I took a chance with the Dalstrong as it was clearly a nicer looking knife but I had no idea how it would stand up to the task against the fibrox. The packaging of this knife is fantastic. a high-end unboxing experience for sure. I was impressed. The knife itself is a very handsome looking knife. It has a bit of weight, it shines, the handle is sleek and comfortable and the blade was much sharper than I expected. Performance wise this handled very well. I could not imagine another slicing knife having significantly better performance - especially for the price. All in all, I am very happy I went for this knife. It looks excellent in the kitchen, it absolutely impresses the table when it's presented, and it is a serious blade up to the task all at the same time.

Nice Slicer for the Price
Let me start by saying I have many knives. I have Yaxell Gou's, Wusthof Culinar's, Dalstrong Shogun and Gladiator, Chicago Cutlery, etc. Outside of the kitchen I have a good connection of folders with several ZDP-189 Spyderco's. I'll start by saying I generally think Dalstrong is overpriced made in China Japanese wanna be cutlery but the company does stand by their product and put a lot of time into making customers happy. See my other reviews on Dalstrongs. In this case I was pleasantly surprised. I got this early in the Dalstrong launch. The knife came sharp, the grind was good generally good design etc. Is it a Yaxell Gou, absolutely not. Is it a good knife for the price? Yes. I used it to slice homemade Bacon on the first cut. It did a great job, cut straight. The blade was straight front to back. I'm happy with the quality on this knife and the performance for the price for hardened German steel. The fit and finish was good but not great. What you would expect at this price range. I also used the knife to cut brisket as I live in Texas. The crust doesn't slice as well as a $30 dollar scalloped dexter russell. Those points just penetrate the crust better. Still, for many things I'm pretty happy and this is serving the purpose I bought it for. Update: I now have the shogun. For the cost the gladiator is a better deal. It's not as solid feeling and doesn't have as much back to the knife but will do the job as a slicer. It's a touch longer in the handle than the Shogun as pictured.

Great value for the price

This knife is beautiful!
So right away, it's worth noting that this knife is beautiful. Quality materials and craftsmanship are immediately apparent from the moment you take it out of the box (which itself is pretty nice too). Seriously, you almost want to put this on display. Weight is good, it feels pretty well balanced for something this long (again, a good sign that shortcuts weren't taken when constructing the handle or selecting materials). It comes with a sheath for the blade, which is a plus (other brands offered sheaths, but require it to be purchased separately). Please don't order something like this and then jam it into a knife drawer - one, you'll damage the blade edge, and two, you'll end up cutting your finger tips off because this thing is SHARP. So far, I've used mine to trim a raw brisket and then to slice (after washing, of course) the cooked brisket. The blade easily slices through without tearing apart the meat at the grain. Definitely have to be careful to not get ahead of yourself and catch a finger, because the slice is almost effortless. I haven't tried it, but I imagine this would work well too with slicing bread, or pork/beef tenderloin or carving a turkey. I wish there was a matching carving fork to make a set, but this knife is great on its own. Very happy with this purchase!

Very, very impressive performance! Best knife experience of my life.
I have been disappointed by high priced knives for over 45 years. The Dalstrong 12 inch Carving Knife with its Granton edge is absolutely the first knife that I was ever thrilled with, and which performed far beyond my best expectations. The Dalstrong company customer service is wonderful. My knife came in an exquisite gift-able box, stunningly sharp and finished like no knife I've ever seen. Balance and handling are incredible. I have been using this knife daily for three weeks, and the edge is still razor sharp. Cutting precise slices of sticky, flexible gravlax is something I consider the ultimate task for a carving knife, and it handled it with ease the first attempt, slicing paper thin. Every other sort of meat is child's play for this knife. My wife has always had difficulty with carving knives, but was astonished at the ease with which she sliced cured salmon, the very first attempt. Extremely easy knife to control. We're talking sharp of another kind. On the basis of my satisfaction, I just ordered Dalstrong's Colossal knife set.

Not as sharp out-of-the-box as I had hoped
I got this for exactly one reason and it seems fine for that (brisket). It is just not as sharp as I had anticipated. I don't want to have to spend much time worrying about that for a knife I use a few times a year. The fit/finish are excellent. The price was good. I probably would have otherwise gone with a Victorinox but I hate the white/black plastic handles. Overall I really LIKE it, had it been sharper to start I would have LOVED it.

Fantastic product, and Outstanding customer experience!
I was excited to make this purchase based on the research I had done, the photos I had seen, other similar products I had seen or used and the reviews that I read about the Dalstrong Slicing Carving knife. I can tell you this -- when it arrived, everything I had anticipated was entirely accurate and my expectations were far exceeded! This knife is absolutely beautiful! It looks and feels amazing, and is razor sharp right out of the box -- which itself is equally impressive! This coupled with the customer experience of a personalized email thanking me for the purchase and informing me of how to contact them should I have any questions or issues regarding the product. By far one of the best purchases I have made on Amazon in a while. I simply cannot wait to use this knife on my next Brisket, Prime Rib, Turkey or Ham, but I am certain the experience will not disappoint! I purchased two similar carving knives (Dexter and Victorinox) at a very reputable Butcher Supply company recently, and they do not even compare with this product -- and they were both more expensive! Luckily, I was able to return one of them once this knife arrived, and I doubt the other will get much use now that I have my Dalstrong... I would highly recommend this product to anyone in the market for a large slicing/carving knife! You simply cannot make a better choice in my opinion.

Blunt Knife
I bought my self this knife back in September 2021, never tried it until yesterday over a brisket. I was very disappointed with the knife as it turns out to be really blunt. I wish that the seller reads this and do something about it.

A cut above the rest
Absolutely blown away by Dalstrong's carving knife and fork set. It is literally a cut above the rest! I smoke and carve a lot of meat and this set makes quick work of it. Well worth the money.
Great set if you don't want to pay £100's. Be careful as they are very sharp so keep them well out of reach of the little ones. Nicely balanced and a good size. They also come well presented in a nice box which is where I store mine when not in use. I would also recommend not using the sharpening stick (supplied) as they are razor sharp and it would do it justice by using a whetstone.
