Informative “Cookbook”
This is a great book with a ton of useful information. The recipes sound really good and are explained well. Looking forward to trying some of them out.

Great book about fermented hot sauce. Highly recommend.
This is a great book. It clearly describes what a beginner (as I am) should know about fermenting and creating pepper sauces. I have six different ferments going right now, and I can't wait to bottle them and test the results. It is more than just a cookbook - it provides some of the science behind the process with getting too technical. Glad I found this book!

Great recipes!
This book has really good instructions for the beginners. It even gave this old fermentation veteran a few new tips. The recipes look yummy. I've been taking their ideas and adapting them to what I have on hand. If you're just starting out or looking for great recipe ideas. This book is for you.

Great beginners book!
Excellent! It was a gift for my husband for Christmas, but I've been reading it too lol. Really great and easy to understand information that doesn't drone on and on. She stays to the point and gets you the info in a nice way. Love it. Looking forward to testing some of the recipes!

Not a Serious Book
People have used fermentation to make food and beverages for thousands of years. It is only in the last century that we have understood the food chemistry that takes place during fermentation. It is only in the past few decades that home cooks have started to think of fermented products as a separate category of food that can be learned and perfected. It is even more recent that fermented salsas have become "a thing". The author Kristen Wood has only a superficial understanding of fermentation. Her descriptions of the process are vague and were gathered second hand. You can learn much more about fermentation on Wikipedia. If you want to read a serious book about fermentation check out Rene Redzepi's "The Noma Guide to Fermentation". It does not cost a lot more than this book but is an example of serious book. Granted it may be too serious for most people but it is an example of original thought and hard work. As for the recipes, I have not tried them all. I am sure that the author has copied recipes she has found in other cookbooks or found online. Something tells me that she did not spend a lot of time coming up with new variations of classic sauces. The photos are nice but this is not a serious book. The book will work for a lot of people but there are better books out there.

Step by Step
Looks great, I was so excited to get this and checked the door and saw nothing, so I logged on and it said it was delivered. I think it arrived right after I checked and while I was logging on to see its where abouts. I went to check a second time and finally found it and have been reading through it and can't wait to try out the recipes.

it is difficult to find fresh peppers in UK for most of the recipes
This book had really nice sounding recipes, but finding the ingredients in the uk is a non starter for most of them. suggestions: - provide substitute chilli options for each recipe - provide option for using dried chillis which are much easier to get hold of

US measurements! Beware!
I liked the sound of this book and when it came I couldn’t wait to get started, until I realised the units were all cups! Yes, I could convert, but no, it’s not what I want! I’m sending my copy back but I’m sure if you could be bothered to convert the units, it would be a nice book!
