What is the actual cooking surface dimensions?

Does the temperature fluctuate or the heat turn off when temp desire is reached?

The heating element controller has an indicator lamp that glows amber as the unit is warming to the desired setting; when that temp is reached, the light goes off but it will continue to maintain that temp until reset or turned off. I do not know how closely the controller is able to maintain the set point but the conductivity of the griddle is good with no noted "hot spots", and it cools rapidly when turned off. If you have an infrared cooking thermometer you could "map" out the surface for variation.
