You can use the vibrating mode by itself without the others, but they need to be disable ahead of time because there is option to use them all together or separated.

Can you set this timer to go off every 5 minutes?

No, but once it's gone off and you press the stop button it will be at the time it was, as with most such timers. To clear it, you press the two small buttons simultaneously.
