It takes metal off the blade as they all do but it does it slowly and predictably. I like that I don't have to soak the stone for 30 minutes before using as it is a 'splash and go'. Follow the instruction sheet which is in Japanese? . I used the Internet to translate the simple instructions. So far, it has sharpened my knives very nicely. Most of them were finished to a mirror by stropping with a fine grit diamond paste applied to the strop.
