That air can occasionally have a small amount of moisture when heated. This is perfectly normal and nothing to worry about. That moisture can never leave the ball.

These work well to keep the heat and humidity in and reduce evaporation for sous vide cooking.  They are a bit of a bother to take out of the water and pack up, but it's really not unpleasant.
