Hello , how can I fInd informations how to use this product?

The package says 4-5 grams per kilogram of ice cream. This translates to a teaspoon or so to 4 cups of liquid (cream or half and half). You will have to adjust the amount to your own preference. The first time I used it I put in a teaspoon and the ice cream was too gummy for my taste. Also note that if you are doing custard style ice cream (with eggs) this isn't too useful because the eggs also work as an emulsifier. This product really does work and I recommend it. Don't put in too much or your ice cream will be gummy.

When is the expiration date?

Current lot is good until May 15, 2022.

Will this help emulsify fat in ice cream recipes? I have access to 35% butterfat cream but it is not well homogenized.

Yes, it can. You may have to experiment little to arrive at right amount of Avacream.
