You could try but this blade worked best for me with dry hard cheese. Even nuts would be too oily and clog the tiny holes. Best to chop up the horseradish in chunks then run in cuisinart with regular chopping blade (metal). You could also try the grating blades - I think there are different size holes. But definitely not the one mentioned in your picture. **Q: Would this make cauliflower rice?** A: Probably not, too fine a shred, more like mush or extremely slush snow when doing raw potatoes. Great for grinding nuts for flourless cakes, I simply love this disc. Note that cauliflower rice requires approximately white rice-sized pieces. Cuisinart DLC-834TX Fine Shredding Disc may be an option, but I haven't tried that, as I find that acceptable results can be achieved simply by pulsing the cauliflower with the chopping blade. **Q: I want to make very small ahredded carrots. Not mush, but small shreds. Will this do that?.** A: I wanted to grate potatoes for potatoe pancakes, but found it too small for that. I think your carrot shreds will be very tiny, almost mush. **Q: Can the disc grate ginger and daikon radish down to the consistency of applesauce? Need to grate bulk purchase and preserve in freezer.
