Flora Danica is a premium mesophilic direct vat inoculant culture designed for professional and artisanal cheese makers. Product description A mesophilic, aromatic, direct vat(DVI) Culture primarily used in the manufacture of Continental semi-hard cheese varieties such as Gouda, Edam, Leerdam and Samsoe as well as soft cheese types, such as Camembert, Blue cheese and Lactic cheeses. Available in two sizes, 50U or 200U. The sachet containing 50 Units is enough to inoculate up to 500 litres (110 gallons) of fresh milk and the sachet containing 200U is enough to inoculate 2000 litres (440 gallons). This culture produces excellent flavour with some CO2, and provides fast acidification properties at low inoculation rates. Description: Mesophilic freeze dried (FD) culture, comprising Lactococcus lactis subsp. cremoris + Leuconostoc + Lactococcus lactis subsp. lactis + Lactococcus lactis subsp. lactis biovar.diacetylactis Storage: Keep deep frozen at -18°C. Please note that this lactic acid culture has a dietary status of Kosher (Dairy Excl. Passover) and is Halal certified. Directions Inoculate up to 130 gallons (500 liters) of milk with this culture.

## Questions & Answers

**Q: Hello i want to buy this product but before i want to know to make sure:   how many grams does this bag contain? when does this product expire or expi**
A: Including the packaging, it is 20 grams.  It doesn't list content in grams.  My only clue is Pack Size: 50U.
The expiration date listed on mine is 10.2020 (pack date 10.2018), however it says it must be kept below -18c (0F) which in my case means it must be used SOON because I don't have anything that chills that far.

**Q: Can I make cream cheese with this?**
A: Yes.  It’s a mesophilic culture, maybe just a bit more flavorful.  If you go to New England Cheesemaking’s website (which is pretty much where most home cheesemakers will reference), they also state that it can be used in cream cheese.

**Q: how does one open the bag and use just a bit then save the rest? is this possible?**
A: Tap the packet so it all goes to the bottom. With clean scissors cut the top off, leave plenty to fold it over a few times. Using tiny measuring spoon measure out the amount you need. Fold the packet tightly and put into a ziplock freezer bag and put that in another ziplock freezer bag. Keep your culture clean and dry! Keep in the freezer. Look for tad, smidgen, dash and pinch measuring spoons.
