Why is this being sold at almost double the msrp?

Probably because the one you are looking at is from a 3rd party scalper. Amazon is selling it for the normal MSRP.

When will this be in stock!?

I don't think human customers will get this product before june or july 2021, and thats being really optimistic. Unfortunately scalpers are using bots to buy all stock on zen 3 cpus and latest graphics cards on each and every online store in the planet. So the only thing we can do is be patient and wait between 6 months and 1 year to be able to buy.

How are people getting it on amazon? They keep telling me it's not in stock yet.

I bought it through the phone app with an alerting application that I downloaded that alerted when in stock. They usually sell out the entire stock they receive in less than 10 seconds so you must be REALLY fast.

Which ram should i pair with this cpu?

DDR4 3600mhz with the fastest timings you can find. You might be able to go to 3800-4000mhz, but the FCLK may struggle to keep up.
