**Q: Why is the carb count so high?**
A: not sure.  It is a caramel color, dense, sweet cheese.  I have been eating the cheese for almost 50 years.  :)  one of the few cheeses that I like.

A: Only gjeitost. It's delicious and everything 
I remember from my girlhood.

We discovered this wonderful, creamy cheese while visiting Norway. Once we got home, I ordered it and it arrived in a cold pack and was fresh. It has a caramel after-taste and is very creamy. Spread it on crackers or eat with fruit, or even by itself.
