**Q: What is the content?**
A: According to the label online at the Kikkoman site: 

Ingredients. SOY SAUCE (WATER, SOYBEANS, WHEAT, SALT), SUGAR, WATER, SALT, BONITO EXTRACT (FISH), NATURAL FLAVORS, MONOSODIUM GLUTAMATE, VINEGAR, CARAMEL COLOR, SODIUM BENZOATE: LESS THAN 1/10 OF 1% AS A PRESERVATIVE, DISODIUM INOSINATE, DISODIUM GUANYLATE, SUCCINIC ACID.

Just thinking about it makes me want a bowl of slurpy noodles!

**Q: Does memmi need to be refrigerated oncr once bottle is openef?**
A: I have never refrigerated either memmi or soy sauce and I've had no problem, and I've been through sever jugs of it,  It might depend on climate, though. I live in Wisconsin, where my house is cool most of the time. I think the more important factor not be to inadvertently contaminate it with utensils that have been in other foods. I pour from the big jug into small bottles, then store the jug on the pantry floor.

**Q: Do you add water or is it already diluted (for ramen)?**
A: I would dilute it. It is very strong otherwise. For ramen I would use it sparingly (undiluted).

**Q: Can you use it as a tare for ramen?**
A: I use this as a substitute to soya sauce. It will give flavor but you may need additional seasoning for ramen.

### ⭐⭐⭐⭐⭐ Great tasting hard to find soup base

Back in the early 1980's one of our twin sons had serious food allergies and our family went vegetarian. A local oriental grocery store owner introduced us to Kikkomen Memmi noodle soup base as a topping for Jasmin scented rice. She kept it on hand in her home for between meal snacks for her children. That was the beginning of our love affair with the wonderful flavor of Memmi. Biggest problem these days is finding it. Our go to Asian food market in Milwaukee only stocks it intermittently. When touring San Francisco a few years ago, we spent a couple hours walking around S.F.'s China Town and came up empty handed. Although it's very expensive buying it on-line we're delighted to be able to purchase Memmi by the half gallon from Amazon. Our grandson loves it and even prefers to enjoy it by drinking it mixed with hot water as a broth.
