Does it contain fish sauce or anchovies please?** A: Yes, Mae Jum Thai Curry Paste products are suitable for Vegans. Our products have been registered with the British Vegan Society. It is, however, traditional to add shrimp paste and fish sauce during the cooking process in many Thai dishes, but we believe that these pungent flavour/aroma paste should not be packed or mixed with our blends of fresh herbs and spices. They should be kept separately. The upside is that this makes our blends suitable for vegans, who can use substitutes like soya sauce, fermented bean paste or miso. It is also appreciated by others that can use the appropriate amount of shrimp paste and/or fish sauce depending on what other ingredients they are using, or indeed to their own preference or taste. **Q: how many curries does one sachet make?** A: We get 3 curries out of one sachet. It keeps for 14 days. **Q: Do you have to use the whole packet once it’s open or will it keep in the fridge?** A: It will keep in the fridge. I tend to use the whole sachet with x1 full can of coconut milk even though it doesn’t state to on the instructions.
