I’ve just got a set of these and the middle bracket moves left and right about 1cm each way. Is this normal ?

Yes, you must tighten to lock in desired position. Suggest using screw at each side to prevent weight of speakers toppling them from the bracket.

can they be attached to plasterboard?

Hi, yes of course with the correct rawl plugs, I hung two Dali Spektor 2 on mine with the rawl plugs supplied and they are fine on plasterboard. These speakers are 4.2KGs each, if you have much heavier speakers I would use some more suitable plasterboard plugs. I hope this helps.
