It works, but I think the electric version by the same company works better. This one is a lot easier to clean though.

The instructions don't show where the rubber ring goes, can someone please tell me?

That's just an extra rubber ring. There's already one installed.

How long would it take to juice an ounce of wheatgrass? Also, does it extract a good amount, leaving the grass almost dry?

The grass will get very dry. (Rabbits and other veggie eating animals love it if you want to put it outside.) How long depends upon how long you can crank and how fast. I do 2 oz in 10-12 minutes.
