He loves poutine because he spent a couple of years in Canada and misses some of their more fatty food choices. I live in Florida so I didn't think cheese from up north would make it here in time but I also didn't have a choice if I was going to make poutine in the right, classic sense. We can't get cheese curds down here. I got it in maybe 2 or three days (much quicker than anticipated) and it was still cold and wrapped really tightly in plastic - two bags. I opened one before making the poutine so I could decide whether or not I needed a back-up plan and it squeaked! I know that's a sign of good cheese curds. It was so good!
