They really know how to keep the crunch in their cultured veggies while adding the perfect touch of complimentary spices to create their own unique, signature foods. Important: There may be some leakage of juices during shipping in summer weather. This is due to the probiotic bacteria waking up and releasing some CO2. The lids are designed to allow some venting when needed rather than have the glass break from the built up pressure. If this happens the product is absolutely safe as the pressure only allows a one way movement, nothing comes in. Upon arrival we suggest to slightly turn the lid over a sink to vent any CO2 and then refrigerate. We can not accept returns or refund in these circumstances, so please do not order this listing if it is a concern. We store these products cold in our warehouse at all times and they need to be refrigerated upon receipt. I am gradually changing to a healthy diet. And this is my first intentional addition of fermented foods. I received it in the mail within 4 days. As suggested in description I immediately opened it to let out CO2. Didn't hear or see it. Then placed in refrigerator for a few hours. Couldn't wait to try it. It is delicious. Very rich flavors, exactly what I like. The only one thing I don't like in this particular mix of beets, carrots, ginger, is the high sodium content, which is 930 mg. sodium per 2 ounce serving. For that reason I almost took off 1 star rating. But did not, because in this line of fermented foods I see other selections with way less sodium content. I've yet to try those. So because of the high sodium in this particular jar, I keep my serving size to less than the stated 2 oz. I like to add this to my basmati rice with other fresh or frozen veggies, and also raw seeds. Makes for a yummy bowl with the addition of this fermented mix.
