NC Country Ham Center Cuts are premium 2-6 oz slices, hand-rubbed and slow-cured over 40-45 days using traditional North Carolina methods. Each pack is vacuum-sealed for freshness and delivers a robust, smoky flavor that’s perfect for classic Southern dishes or gourmet meals year-round.

## Description

North Carolina Country Ham Center Cuts 2 - 6oz packages. Sliced and ready for you to fry up some for breakfast. Store in freezer and use all year. We are a family run business and still cure our hams the slow, old-fashioned way. We hand rub each of our fresh hams with our special cure mixture, and place them in our refrigerated curing room in oak bins. After a few days in this cure, each ham is hand rubbed a second time and returned to the curing room where they stay for a total of 40 to 45 days. At this stage of the curing process, the hams are washed of excess salt and placed in equalization. This process allows the cure mixture to equalize throughout the whole ham giving it a consistent flavor. After equalization, the hams are hung in the drying/aging room at a temperature of 80 to 85 degrees for 25 to 35 days. This is where the old time southern flavor of country ham is achieved. For a more aged, robust flavor, we age the hams longer. Our hams have won many awards including Smoked Country Ham Grand Champion.

Review: Quality Country Ham - It's always a crapshoot when buying country ham products from an unknown vendor. The quality can be inconsistent even from people you've dealt with before. I was just in North Carolina in March and bought 3 packages of of ham from 3 different suppliers at the local Red Lion store. On one was even halfway satisfactory so upon my return home to home to Ohio I decided to try this Phillips Brothers I saw on desertcart. What a pleasant surprise. The shipment arrived within 2-3 days. I could tell just by looking at the meat that these were quality center cuts. Not dried out, or discolored with very little fat. The taste is perfect. Just the right amount of salt without numbing your mouth so this doesn't have to be soaked or rinsed to remove the excess brine altough some people may want to for their particular taste. I've fried this, nuked it and grilled it on the George Foreman and it's really good any way I prepare it. My family is from North Carolina and we'd bring home a huge ham every summer from one of the family member's smokehouses. This Phillips Brothers product brings back fond memories of those homemade hams. I will buy this again.

It's always a crapshoot when buying country ham products from an unknown vendor. The quality can be inconsistent even from people you've dealt with before. I was just in North Carolina in March and bought 3 packages of of ham from 3 different suppliers at the local Red Lion store. On one was even halfway satisfactory so upon my return home to home to Ohio I decided to try this Phillips Brothers I saw on Amazon. What a pleasant surprise. The shipment arrived within 2-3 days. I could tell just by looking at the meat that these were quality center cuts. Not dried out, or discolored with very little fat. The taste is perfect. Just the right amount of salt without numbing your mouth so this doesn't have to be soaked or rinsed to remove the excess brine altough some people may want to for their particular taste. I've fried this, nuked it and grilled it on the George Foreman and it's really good any way I prepare it. My family is from North Carolina and we'd bring home a huge ham every summer from one of the family member's smokehouses. I have never had country ham before, and I was curious to try it. I'm glad I didn't purchase a whole ham, because this was the saltiest thing I have ever tasted. It also has a chewy texture and odor that is unpleasant. I can understand this curing method before there was refrigeration, but in this day flavor and texture should be the important issues. I will buy proscuitto to satisfy my urge for slightly salty, unsmoked pork - it isn't any more expensive than this horribly salty ham and is much more delicate and delicious.

The only thing missing from my memories of a good old ham biscuit is the biscuit. I am on a journey to making an edible biscuit, I am making a batch a day until I get it right. I had to eat my ham with a Grand, which are very good but certainly not a homemade buttermilk. This ham is very high quality, delicious. I will be buying this again, it is hard to recommend this because people just don't understand country ham. But I do it anyway.
