Do you just mix this with water or must you use beer or some other liquid. Direction no on web page!

Hello - I just use a bottle of mineral water that I've chilled in the fridge for a couple hours. I've also used ice cold ginger ale which works fine is a slightly different consistency. Haven't tried beer yet but I would expect it would behave a lot like the ginger ale. Depending on what your battering you might want to play around with the batter to liquid ratio to get a thicker or lighter coating.

Can you bake the tempura instead of deep frying (like trader joe's frozen birds nest tempura that tastes fried)?

No it does not bake as well. It tends to just drop on the pan and spread . It’s a batter not a dry mix

what is the expiration date on the batter

I'm not sure what you mean. The best by date on the bottom of my box is 26 dec 22. If you're asking how long you can keep the batter once it's made, it has a leavener in it, so it should be used right away.

Fabulous and Extra Cristpy

I wanted to make tempura fish and vegetables for my husband and me and like Kikkoman Products so bought 2 boxes. I had read a few recipes through the years and decided to alter the instructions to suit us. Instead of water I added 3/4 cup vodka and a can of club soda. I cannot say enough about how wonderful this was. Yes, I changed their instructions but the final result was phenomenal! My apologies to Kikkoman for changing the recipe, but maybe they would like to include this suggestion.
