I added this 7" pan to the collection to make 2/3 recipe of my favorite pumpkin cheesecake for Thanksgiving - one of those occasions where high school geometry comes in handy to calculate the volume of the pan. Yes, I know one can add water and measure the volume that way, but using those hard-earned math skills was more fun. The sides of these pans always remove cleanly and smoothly, they bake evenly, and the cheesecake can be easily removed from the pan bottom by gently loosening with a long flat spatula or sliding the bottom of a round tart pan under it. It can then be transferred to a prettty serving plate. No springform pan is 100% leakproof when you have so much butter in your crust, so I do wrap in heavy-duty foil but do not use a water bath. ### ⭐ Not an 8 inch pan.... *by M***E on July 5, 2011* I ordered and received a variety of 8 inch springform pans from Amazon to test out different brands, etc. I was very disappointed that this Kaiser pan is NOT a true 8 inch pan. It is clearly smaller than the other 8 inch pans in my order and upon measuring it, I discovered the inside diameter to be barely over 7 inches. The BASE-which comes up over the outside of the pan ring-measures 8 inches. I need an 8 inch cake for shipping purposes, so I will return this and try the Kaiser 9 inch in hopes that if it measures like this one, I will actually get an 8 inch cake. ### ⭐⭐ Not an 8 inch pan *by E***E on January 29, 2016* Regarding the 8 inch pan, the diameter of the top, which corresponds to the diameter of the cake you're making, is approximately 7.5 inches. This is strange, because I have a 9 inch Kaiser springform pan that is 9 inches in diameter at the top.
