I also bake quite a bit of bread and have many books on the subject. The recipes that call for malt, whether it's rye or some other grain, usually mean dried malt extract (DME) which is a very fine powdered, fermentable sugar. It also comes in liquid form which resembles a thick syrup that some bread recipes also call for. Malt extracts are derived by coarsely milling the malted grains and then soaking them in 150 - 160 degree (F) water until the starches are converted to sugars.
