A: Assuming something is gluten free, (due to the various ingredients generally being believed to be free of gluten), is not acceptable in some instances, ... as without being guaranteed GF, (certified label), & free of any potential cross-contamination), a person with Celiacs Disease, or a severe allergy to gluten, could unwittingly end up in a significant amount of pain, & end up in the hospital.

A: No, it won’t be as good. You might want to use the Korean glass noodles for japchae

The quality is very good. I love the texture when cooked and it's exactly what I have been looking for. Perfect size of packaging for a small family like mine and it's really easy to prepare. These vermicelli noodles ordered online cost me three times more than what I pay at the Asian store. The key to cooking it without clumping: soak the content of the package in a bowl of room temperature-water until the noodles are just soft enough. Drain all the water out. Using kitchen shears, clip the noodles two or three times to shorten the length and make the cooking easier. Then the MOST IMPORTANT THING: toss the uncooked noodles with three tablespoons of vegetable oil (I use olive oil). Then begin the cooking: heat oil in a skillet, add crushed ginger, garlic, crab meat, carrots julienne, sliced soaked shitake mushrooms, the vermicelli bean thread noodles, oyster sauce, green onion, toss till noodles soften. Enjoy!
