Bob's Red Mill Tapioca Flour is also known as tapioca starch. Extracted from the root of the cassava plant, this grain-free, paleo-friendly flour is a gluten free pantry staple great for baking and cooking. A: Instead of saying "I don't know", I would say check with BRM to see what they say about their product.  It might work just fine and would certainly be less expensive that Xanthan gum.

A: Azedo would be starch …doce is flour

**Q: my pie recipe calls for 1/4 cup tapioca, but the small boxes are expensive. can this be used as a substitute?**
A: Yes u can. Just measure 1/4 cup out of it. But keep in mind this is tapioca flour not tapioca pearls that u use to make pudding.
