The crystals are about the same fineness as your average white granulated sugar, and it's a pale golden colour. Probably on a par with Demerara sugar for colour depth, maybe even lighter than some brands of Demerara. It has a lovely rounded light flavour. It dissolves fast but I have noticed that it leaves one or two flecks of insoluble impurities. I've been using this to make sugar water for my water kefir, otherwise I probably wouldn't have noticed this.
