Pizzelle recipes are very easy to find online, and very easy to make. I've looked online at several basic Pizzelle recipes with vanilla and/or anise and the ones I've seen are almost identical to those in the recipe pamphlet that came with mine. I even ordered an Italian cookie cookbook and the same recipe is in there. I usually grate in lemon or orange zest too. These Pizzelle makers are vintage so I'm sure they are sold in various conditions. I wanted this particular model because in my research it seemed like the benchmark that others often referred to or compared theirs against. Mine was almost like new and the hot plates as so shiny and polished that I've never had a Pizzelle stick. It's not a teflon surface, just highly polished metal and it's exceptional at releasing the cooked cookies. Good luck. This iron makes thin, crispy pizzelles - the way they should be! The non-stick irons make a thicker, tougher pizzelle. Besides, using just a little oil on the iron as it first warms up prevents sticking anyway. When I first became interested in making pizzelles I was told not to buy a non-stick pizzelle iron - I am forever grateful for that advice and the recipe that I was given by a dear friend!!I purchased my first VillaWare iron in 1990. After using it twice I was ready to "double up", working two irons at once. After attempting this with a borrowed iron, I purchased my second iron in 1991. Using two irons makes the whole process move along quickly and easily. Shortly after you have the second iron filled and closed, the first one is just about ready to empty.Four years ago my son decided he wanted to make pizzelles too. So, of course, I purchased a VillaWare Prima iron for him! Today, I purchased a second iron as a gift for his 30th birthday.
